  • 2 large eggs
  • 1/4 cup (60ml) milk
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons (28g) unsalted butter, melted

Instructions

  1. Prep your bread: Start by flattening each slice of bread with a rolling pin.
  2. Make the filling: In a medium bowl, whisk together the eggs, milk, and vanilla extract until well combined. Set aside.
  3. Slice and fill: Spread a thin layer of your favorite creamy filling in the center of each slice of flattened bread. Roll each slice tightly.
  4. Dip into the mixture: Dip each roll-up into the egg mixture ensuring they are well-coated.
  5. Cinnamon sugar magic: In a small bowl, mix the granulated sugar and cinnamon. Roll each French toast in this mixture.
  6. Heat the pan: In a large skillet, melt the butter over medium heat.
  7. Cooking time: Carefully place the roll-ups seam-side down in the skillet. Cook for about 2-3 minutes on each side until golden brown.

Notes

For a vegan option, swap eggs for flaxseed eggs and use plant-based milk and butter.
