Cowboy Butter Chicken Potatoes

A delicious dish featuring crispy potatoes and juicy butter-infused chicken for a comforting meal.

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 lb baby Yukon gold potatoes
  • 1/2 cup butter (or olive oil for a lower-fat version)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon smoked paprika
  • Other seasonings as desired (e.g., chili powder, Italian seasoning)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together butter, garlic, parsley, lemon juice, and spices in a small bowl to prepare the cowboy butter.
  3. Rinse and halve the baby potatoes, placing them in a large mixing bowl.
  4. Drizzle about 2 tablespoons of cowboy butter over the potatoes, then toss with salt, pepper, and smoked paprika.
  5. Add chicken pieces to the bowl and drizzle with another 2 tablespoons of cowboy butter, tossing to coat.
  6. Spread seasoned potatoes on a baking sheet, nestling chicken pieces in between.
  7. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
  8. Drizzle remaining cowboy butter over the dish once out of the oven and garnish with parsley before serving.

Notes

Feel free to add vegetables or adjust seasonings to your taste. Store leftovers in an airtight container for up to 3 days.
