Hot Honey Bacon Chicken Mac

A creamy, crunchy mac and cheese dish with crispy bacon and a sweet and spicy hot honey drizzle.

  • 2 cups elbow macaroni
  • 4 cups shredded sharp cheddar cheese
  • 2 cups cooked chicken, shredded or diced
  • 4 strips of bacon, cooked and crumbled
  • 1/2 cup hot honey
  • 1 cup whole milk
  • 1 tablespoon butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Boil the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente (about 7-8 minutes). Drain and set aside.
  2. Prepare the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until it’s golden and smells toasty. Gradually whisk in the milk, stirring constantly until smooth and slightly thickened (about 3-4 minutes).
  3. Add the Cheese: Sprinkle in the shredded cheese, garlic powder, salt, and pepper. Stir until the cheese is completely melted and smooth. Taste and adjust seasoning as needed.
  4. Combine Chicken and Bacon: Toss in the cooked chicken and crumbled bacon to the cheese sauce. Mix until well combined. Then, add the cooked macaroni and stir until everything is coated and creamy.
  5. Drizzle with Hot Honey: Transfer the mixture to a greased baking dish and drizzle with hot honey. The sweet heat will blend beautifully with the creamy cheese.
  6. Bake to Perfection: Preheat your oven to 350°F (175°C). Bake the mac for about 20-25 minutes until bubbly and just starting to brown on top.

Notes

For an extra crispy topping, broil for the last 2-3 minutes. Can be made ahead and refrigerated up to 24 hours before baking.
