Creamy Tuscan Rice Skillet

A comforting one-pan meal featuring creamy rice, tender chicken, fresh spinach, and sun-dried tomatoes that brings the flavors of Tuscany to your table.

  • 2 Chicken Breasts (or Thighs)
  • 2 cups Fresh Spinach
  • 1 cup Arborio Rice (or long-grain rice)
  • 1/2 cup Sun-Dried Tomatoes
  • 2 cloves Garlic, minced
  • 1/2 cup Cream Cheese
  • 4 cups Chicken Broth
  • 2 tablespoons Olive Oil
  • 1 tablespoon Italian Seasoning

Instructions

  1. Cut the chicken into bite-sized pieces and season it with salt and pepper. Let it rest at room temperature for 15-20 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 5-7 minutes.
  3. Add minced garlic and cook until fragrant, about 30 seconds.
  4. Toss in sun-dried tomatoes and mix well. Cook for another minute.
  5. Stir in the rice and toast slightly for about 2 minutes.
  6. Add chicken broth gradually, bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes until the rice is tender.
  7. Mix in spinach until wilted, then add cream cheese and stir until melted.
  8. Season with Italian seasoning, salt, and pepper, adjusting to taste.
  9. Plate your dish and top with extra spinach and sun-dried tomatoes if desired.

Notes

Feel free to make the dish vegetarian by substituting chicken with chickpeas and using vegetable broth. Adding extra veggies like bell peppers or zucchini can enhance the nutrition and flavor.
