Ingredients

  • Diced ham steaks
  • Shredded pork shoulder
  • Long-grain white rice
  • Dill pickles
  • Yellow or white onion
  • Fresh minced garlic
  • Bell peppers (any color)
  • Cumin
  • Oregano
  • Chicken broth

Instructions

  1. Get cooking! Sauté the aromatics: In a large skillet, add a splash of olive oil over medium heat. Once hot, toss in the diced onions and let them cook down until they’re soft and translucent, about 4-5 minutes.
  2. Add the garlic and peppers: Stir in the minced garlic and the colorful bell peppers. Sauté for an additional 2-3 minutes until fragrant and tender.
  3. Layer in the meats: Now, add in the shredded pork and diced ham. Stir everything together, letting those meats get a chance to mingle with all those delightful flavors. Cook for about 3-4 minutes until heated through.
  4. Toss in rice and spices: Sprinkle in the rice, cumin, and oregano. Stir well to coat the rice in all the yummy juices.
  5. Pour in the liquid: Add the chicken broth and bring the mixture to a boil. Once bubbling, reduce the heat, cover, and let it simmer for about 20 minutes or until the rice is cooked and fluffy.
  6. Final touch with pickles: When the rice is done, fold in your pickles. Let the skillet sit covered for about 5 minutes off the heat.
