Egg Roll in a Bowl

  • 2 lbs lean ground turkey
  • 1 bag coleslaw mix
  • 3 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1/4 cup low-sodium soy sauce
  • 1 tsp sesame oil

Instructions

  1. Prep your ingredients by mincing the garlic and grating the ginger. Toss the coleslaw mix with a pinch of salt and set aside.
  2. Cook the turkey in a large skillet over medium heat, breaking it apart. Cook until browned, about 6-8 minutes.
  3. Add the minced garlic and grated ginger to the turkey and sauté for another 2 minutes.
  4. Toss in the coleslaw mix, stirring until it wilts down, about 3-5 minutes.
  5. Drizzle in the soy sauce and sesame oil, mixing well to coat.
  6. Check the taste and adjust seasoning before serving.
  7. Serve in bowls and garnish as desired.
