Garlic Bread Chicken Pot Pie

A delicious twist on traditional chicken pot pie with the crispy, garlicky goodness of garlic bread.

Ingredients

  • 1 loaf of garlic bread
  • 2 cups cooked chicken, shredded
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 cup chicken broth
  • 1/2 cup cream or milk
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)

Instructions

  1. Prep your oven: Preheat to 375°F (190°C).
  2. Cook your chicken (if not prepped): Boil or roast until cooked through and shred.
  3. Sauté your veggies: Toss in mixed veggies with olive oil for about 5 minutes.
  4. Create the saucy mix: Combine chicken, veggies, chicken broth, and cream; stir in salt, pepper, and thyme.
  5. Lay down the garlic bread in a baking dish.
  6. Pour the filling over the garlic bread.
  7. Top with more garlic bread, ensuring even coverage.
  8. Bake it up for about 25–30 minutes until golden brown.
  9. Cool and serve after letting it sit for a few minutes.

Notes

You can prepare the filling in advance and keep the garlic bread layered separately until you’re ready to bake.
