Hot Honey BBQ Meatball Bowls

Savory meatballs drizzled with sweet and spicy barbecue sauce, resting on a fluffy bed of rice — the perfect comfort food.

  • 1 lb Ground Meat (beef, turkey, or chicken)
  • 1 cup Breadcrumbs
  • 1 Egg
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt & Pepper to taste
  • 1/2 cup Hot Honey BBQ Sauce
  • 2 cups Rice (white, brown, or cauliflower rice)

Instructions

  1. Prep your meatball mixture: In a large mixing bowl, combine your ground meat with breadcrumbs, egg, garlic powder, onion powder, salt, and pepper.
  2. Shape the meatballs: Take a scoop (about 2 tablespoons) of the mixture and roll it into a ball. Place them on a baking sheet lined with parchment paper.
  3. Bake or pan-fry: Cook the meatballs in the oven at 400°F (200°C) for about 20 minutes until golden brown or pan-fry them in a skillet with a drizzle of olive oil until each side is browned and cooked through.
  4. Coat them in sauce: Once baked or browned, drizzle your hot honey BBQ sauce over the meatballs in the skillet, shaking the pan gently to coat evenly.
  5. Cook your rice: While the meatballs are getting their sauce bath, cook your choice of rice according to the package instructions, usually about 15 minutes for white rice and 30 for brown.
  6. Assemble your bowls: Layer the cooked rice in your serving bowls, spoon the saucy meatballs on top, and sprinkle with your favorite crunchy toppings.
