Hot Honey Cornbread Casserole

A sweet and spicy cornbread casserole that combines the comforting familiarity of cornbread with a cheeky twist of heat and sweetness.

  • 1 cup cornbread mix
  • 1 cup flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • Pinch of salt
  • ½ cup hot honey
  • 2 large eggs
  • 1 cup milk (or plant-based milk)
  • 1 cup shredded sharp cheddar cheese
  • Optional: chopped jalapeños, corn kernels, or cooked bacon for added flavor

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together 2 eggs, 1 cup of milk, and ½ cup of hot honey in a large bowl.
  3. Mix your cornbread mix with 1 cup of shredded cheddar cheese in a separate bowl.
  4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Grease a 9×13 inch casserole dish and pour the batter in, spreading it out evenly.
  6. Pop the casserole into the oven and bake for 25-30 minutes.
  7. Sprinkle another ½ cup of shredded cheddar on top during the last 5 minutes of baking.
  8. Drizzle with more hot honey after removing it from the oven.

Notes

Serve warm topped with crème fraîche or sour cream, and pair with a fresh salad or grilled veggies.
