Mediterranean Chicken Zucchini Bake

A delicious Mediterranean-inspired dish featuring baked chicken and fresh vegetables for an irresistible crunch.

  • 2 chicken breasts, diced
  • 2 zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chicken and veggies by combining them in a large bowl with olive oil, seasonings, and mixing to coat evenly.
  3. Bake the mixture in a baking dish for about 25 minutes.
  4. Top with shredded mozzarella cheese after 25 minutes.
  5. Return to the oven for another 10–15 minutes until cheese is bubbly and golden.
  6. Serve immediately after letting it sit for a few minutes.

Notes

For a spicy kick, add crushed red pepper flakes. You can prep the dish ahead of time and refrigerate without cheese until ready to bake.
