A fun twist on breakfast that combines fluffy pancakes with savory sausage and melted cheddar cheese, creating a delicious taco experience.

  • 2 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1 1/2 cups milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • Optional toppings: fresh herbs, sliced avocado, Greek yogurt, salsa, hot sauce

Instructions

  1. Combine your dry ingredients: flour, baking powder, salt, and sugar in a bowl.
  2. Whisk together the wet ingredients: milk, eggs, and melted butter in another bowl.
  3. Mix the wet into the dry until just combined, leaving lumps.
  4. Rest the batter for 5-10 minutes for fluffiness.
  5. Heat a non-stick skillet over medium heat and coat with cooking spray.
  6. Pour 1/4 cup of batter onto the skillet; flip when bubbles form.
  7. Cook each pancake for 2-3 minutes per side.
  8. Heat another skillet for breakfast sausage over medium-high heat.
  9. Add sausage and cook until browned.
  10. Assemble the taco by placing sausage and cheese in a pancake; fold and serve with toppings.
