Ingredients

  • Beans (black or pinto)

Instructions

  1. Preheat your oven to 425°F (220°C). Peel and slice sweet potatoes into fry-shaped sticks, toss them with olive oil, salt, and paprika, then bake for 20-25 minutes.
  2. Add beans to a large skillet over medium heat, along with salt and spices, and warm through for about 5 minutes.
  3. Mix crispy sweet potato fries into the skillet with the beans, ensuring they are coated in flavor.
  4. Sprinkle cheese generously over the mixture, reduce heat to low, cover, and let melt for 3-5 minutes.
  5. Top with diced avocado and additional toppings like cherry tomatoes and herbs before serving.
