Creamy Chicken Lasagna Soup

A comforting and creamy soup that combines all the flavors of lasagna without the hassle of layering and baking.

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, diced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup lasagna noodles, broken into pieces
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Sauté your base by heating olive oil in a large pot. Add diced onion and sauté until translucent, then add garlic and cook until fragrant.
  2. Cook the chicken by stirring in the diced chicken breast and seasoning with salt and pepper. Cook until no longer pink.
  3. Add the broth and diced tomatoes, stirring to combine. Bring to a gentle boil.
  4. In go the noodles; add broken lasagna noodles and Italian seasoning, stirring well. Let it simmer until the noodles are al dente.
  5. Cream it up by stirring in the ricotta and half of the mozzarella until creamy. Optionally, add a splash of cream or milk.
  6. Adjust seasoning to taste.
  7. Serve the soup in bowls, topping with remaining mozzarella cheese and fresh basil.

Notes

Allow the soup to rest for 10 minutes after cooking to enhance the flavors. For variations, try adding spinach, mushrooms, or spices as per your preference.
