Crockpot Creamy Mushroom Chicken

A comforting and delicious Crockpot recipe featuring tender chicken thighs in a creamy mushroom sauce.

  • 2 lbs chicken thighs
  • 10 oz mushrooms (cremini or button)
  • 1 onion (yellow or white)
  • 3 garlic cloves (minced)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Thyme (fresh or dried)

Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. Add olive oil to a skillet, cook chopped onion until translucent, then add mushrooms until golden.
  3. Toss in minced garlic and sauté for 1 minute.
  4. Transfer the sautéed vegetables into the slow cooker with the chicken thighs and pour in the chicken broth; sprinkle thyme on top.
  5. Cover and cook on low for 6-7 hours or high for 4 hours.
  6. Remove the chicken, stir in heavy cream, shred the chicken, and combine everything.

Notes

Serve over rice or mashed potatoes and pair with steamed vegetables or crusty bread.
