A delicious and easy Crockpot Mexican Chicken dish that combines comfort food with vibrant flavors, perfect for weeknight dinners.

  • 2 lbs chicken thighs
  • 1 can diced tomatoes
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 tbsp taco seasoning
  • 1 tsp oregano

Instructions

  1. Prepare your ingredients: Slice your bell pepper and onion into uniform pieces.
  2. Layer in the crockpot: Place sliced onions at the bottom, followed by bell pepper and chicken thighs.
  3. Add tomatoes and spices: Pour the diced tomatoes over, then sprinkle taco seasoning and oregano.
  4. Cooking time: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred and serve: Remove chicken, shred it, and mix back with juices in the pot.
