Pickle Bacon Mac and Cheese

A comforting bowl of mac and cheese with a zesty twist of pickles and crispy bacon, perfect for any rainy day.

  • 8 oz macaroni
  • 6 oz bacon, chopped
  • 1 cup diced dill pickles
  • 2 cups sharp cheddar cheese, shredded
  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk (whole or 2%)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta by bringing a large pot of salted water to a boil. Add macaroni and cook until al dente, about 7–8 minutes.
  2. Cook the bacon in a skillet over medium heat until crispy, about 6–8 minutes.
  3. Make the cheese sauce by adding butter to the skillet, then stirring in flour to create a roux. Gradually whisk in the milk until thickened, then add cheese.
  4. Combine the cooked macaroni with the cheese sauce, bacon, and pickles.
  5. Bake in a preheated oven at 350°F (175°C) for about 20 minutes for a crispy top, if desired.

Notes

For a crunchier topping, save some bacon and pickles for garnish. This dish can be made ahead and reheated as needed.
