Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. Mix dry ingredients: In a large bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Combine wet ingredients: In another bowl, whisk together eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract until smooth.
  4. Bring it all together: Pour the wet mixture into the dry and gently fold together with a spatula.
  5. Fill muffin tins: Scoop the batter into the prepared muffin tins, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes, until a toothpick inserted comes out clean.
  7. Add the crunchy top: Sprinkle granulated sugar on muffins and caramelize using a kitchen torch or broiler.
  8. Cool and enjoy: Let cool completely on a wire rack before serving.
