  • ½ tsp baking powder

  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • ¾ cup brown sugar
  • ½ cup vegetable oil
  • ¼ cup milk
  • 1 tsp vanilla extract
  • ⅓ cup cocoa powder
  • 1 cup chocolate chips
  • 3 tbsp milk (additional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grab a muffin tin and line it with paper liners or grease it lightly with non-stick spray.
  3. In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, pumpkin pie spice, and cocoa powder.
  4. In another bowl, beat together the eggs and brown sugar until well combined.
  5. Add the pumpkin puree, vegetable oil, milk, and vanilla extract, then mix until everything is beautifully combined.
  6. Pour the wet mixture into the dry ingredients and gently fold together.
  7. Fold in the chocolate chips.
  8. Scoop the batter into your prepared muffin tin, filling each cup about three-quarters full.
  9. Pop the muffin tin in the preheated oven and bake for 18 to 20 minutes.
  10. Once baked, allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.

Notes

Serve with a drizzle of chocolate or a spread of nut butter. These muffins are great with coffee or tea!
