Ingredients

  • 2 lbs chicken breasts
  • 2 cups red enchilada sauce
  • 1 small onion, diced
  • 1 tsp cumin
  • 1 tsp garlic powder

Instructions

  1. Start by placing the chicken breasts at the bottom of your crockpot. Season with salt and pepper.
  2. Dice the onion into small pieces and add to the chicken.
  3. Sprinkle the cumin and garlic powder over the top, then toss gently.
  4. Pour the enchilada sauce over the chicken and onions, covering them completely.
  5. Set the crockpot on low for 360-420 minutes or high for 180-240 minutes.
  6. Remove the chicken once cooked and shred it with forks, then return it to the pot.
  7. Serve warm with tortillas, rice, or salads.

Notes

For a thicker filling, save some sauce to add before serving. Adjust spice level with additional chili powder or jalapeños.
