Crockpot Chicken Pot Pie Filling

A cozy and comforting chicken pot pie filling made easily in the crockpot, blending tender chicken with vibrant vegetables and a creamy base.

Ingredients

  • 2 lbs chicken breasts
  • 2 cups frozen mixed vegetables
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 tsp thyme
  • Black pepper to taste

Instructions

  1. Rinse your chicken breasts and pat them dry with a paper towel.
  2. Sprinkle a touch of salt and pepper over the chicken.
  3. Place the chicken breasts at the bottom of the crockpot.
  4. Pour in the frozen mixed vegetables over the chicken.
  5. In a bowl, combine the chicken broth, cream of chicken soup, thyme, and black pepper.
  6. Stir until well mixed, and pour this mixture over the chicken and veggies.
  7. Cover the crockpot and cook on low for 360 minutes or on high for 240 minutes.
  8. Remove the chicken and shred it with two forks, then return it to the pot.
  9. Stir everything together until well combined.

For best flavor, use low-sodium chicken broth and feel free to mix in fresh herbs or cheese before serving.
