Crockpot Pineapple Chicken

A delicious and easy Crockpot Pineapple Chicken recipe that combines juicy chicken with sweet pineapple for a tropical delight.

  • 2 lbs boneless, skinless chicken breasts
  • 20 oz pineapple tidbits
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 red bell pepper

Instructions

  1. Start by trimming any excess fat from the chicken breasts.
  2. Add the pineapple tidbits, draining the juice into a bowl.
  3. In a bowl, combine the soy sauce, honey, and the reserved pineapple juice.
  4. Place the chicken breasts at the bottom of the crockpot, followed by the pineapple tidbits, and then pour the sauce over.
  5. Slice the red bell pepper into thin strips and scatter over the chicken.
  6. Cover the crockpot with its lid and set it to cook on low for 360 minutes or on high for 240 minutes.
  7. Once the cooking time is up, remove the chicken and shred it with two forks.

Notes

Serve this dish over fluffy rice or quinoa. Perfect for leftovers too!
