BBQ Pulled Pork Mac Bake

A comforting dish combining smoky pulled pork, creamy cheese, and a crunchy breadcrumb topping.

  • 2 cups macaroni
  • 2 cups pulled pork
  • 1 cup BBQ sauce
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups milk
  • 2 cups shredded cheese (sharp cheddar and mozzarella)
  • 1 cup breadcrumbs (panko or regular)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni in salted boiling water until al dente, about 7-9 minutes. Drain and set aside.
  3. Mix the pulled pork with 1 cup of BBQ sauce in a bowl until coated.
  4. Make the cheese sauce by melting butter, adding flour to create a roux, then whisking in milk and stirring in cheese until smooth.
  5. Combine the cooked macaroni, pulled pork mixture, and cheese sauce. Stir to coat evenly.
  6. Transfer the mixture to a greased 9×13 inch baking dish.
  7. Prepare the topping by mixing breadcrumbs with olive oil and seasonings, then sprinkle over the mac bake.
  8. Bake for 25-30 minutes until golden brown and bubbly.
  9. Let it rest for 5-10 minutes before serving.

Notes

Great for meal prepping; double the recipe for leftovers.
