Southwest Chicken Rice Bowls

A vibrant and satisfying dish that combines seasoned chicken, brown rice, corn, and black beans for a flavorful meal.

  • 2 lbs chicken breasts
  • 1 tbsp taco seasoning
  • 2 cups cooked brown rice
  • 1 cup corn
  • 1 can black beans, drained
  • Salsa (your favorite kind)

Instructions

  1. Prep and season the chicken by washing and drying it, then seasoning it with taco seasoning. Marinate for 30 minutes if desired.
  2. Cook the chicken in a skillet over medium-high heat with olive oil for 6-7 minutes per side until fully cooked.
  3. Shred the chicken after resting it for a few minutes to retain juices.
  4. Warm the cooked brown rice, corn, and black beans together in the same skillet on low heat.
  5. Assembly time! Start with a scoop of the rice and bean mixture, top with shredded chicken and salsa.

Notes

For added flavor, layer ingredients visibly in clear bowls. Serve with lime wedges and a dollop of sour cream.
