Summer Corn Salad

A vibrant and crunchy salad that combines fresh corn, juicy tomatoes, and zesty lime for a perfect summer dish.

  • 2 cups fresh sweet corn
  • 1 cup diced tomatoes
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 avocado, diced
  • Salt and pepper to taste

Instructions

  1. Prep the corn: Slice the kernels off the cob or warm frozen corn in the microwave.
  2. Dice the vegetables: Chop tomatoes, red onion, and avocado; soak onion in cold water if desired.
  3. Mix it up: Combine corn, tomatoes, red onion, and cilantro in a large bowl and toss gently.
  4. Dress it: Drizzle lime juice, add salt and pepper, then toss again carefully.
  5. Taste test: Adjust seasoning and add more lime juice if desired.
  6. Chill out: Let the salad chill in the fridge for at least 30 minutes for best flavor.

Notes

Add avocado just before serving to prevent browning. Experiment with variations like adding black beans or diced cucumbers.
