Sweet and Savory Grilled Nectarine Burrata and Prosciutto Salad

  • 2 ripe nectarines, halved and pitted
  • 8 oz burrata cheese
  • 4 oz prosciutto, thinly sliced
  • 4 cups arugula or mixed greens
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Prepare the nectarines by halving and pitting them.
  3. Grill the nectarines cut-side down for about 2-3 minutes.
  4. Create the salad base by tossing the greens with olive oil, balsamic vinegar, salt, and pepper.
  5. Build the salad by layering the greens, tearing burrata on top, and adding prosciutto and nectarines.
