Crunchy and Colorful Taco Slaw

A vibrant, fresh, and zesty slaw that adds a crunchy twist to taco night.

  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 cup Greek yogurt
  • Juice of 1 lime
  • 12 jalapeños, finely chopped
  • Salt and pepper to taste
  • Optional: cilantro for garnish

Instructions

  1. Prepare your veggies by shredding the green cabbage and grating or julienning the carrots.
  2. Mix the shredded cabbage and carrots in a large mixing bowl.
  3. Whip up the dressing by combining Greek yogurt, lime juice, and jalapeños in a separate bowl, whisk until smooth.
  4. Combine the dressing with the cabbage and carrots, ensuring even coating.
  5. Garnish with cilantro if desired. Serve immediately or chill for 30 minutes to enhance flavors.

Notes

Adjust jalapeños to taste for desired heat level. Leftovers can be stored for up to 3 days in an airtight container.
