Taco Turkey Meal Prep

  • 2 lbs lean ground turkey
  • 1 packet taco seasoning
  • 2 cups cooked brown rice
  • 1 can black beans, drained
  • 1 cup corn
  • Salsa, to taste

Instructions

  1. Sauté the ground turkey in a large skillet over medium-high heat with a splash of olive oil until browned (about 5-7 minutes).
  2. Add the taco seasoning and a splash of water to the turkey, stirring thoroughly and simmering for another 2-3 minutes.
  3. Mix in the drained black beans and corn, cooking for another 5 minutes.
  4. Prepare the brown rice by reheating if pre-cooked, adding lime juice for flavor.
  5. Assemble meal prep containers with a scoop of cooked brown rice topped with the turkey-bean-corn mixture and a tablespoon of salsa.
  6. Cool and store the meal prep bowls in the fridge for up to four days or freeze them for later.
