  • 1 cup Greek yogurt
  • 2 cups shredded chicken
  • 1 cup cucumbers, diced
  • 1/2 cup red onion, diced
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (dill or parsley)
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Chop the cucumbers, dice the red onion, mince the garlic, and shred the chicken if needed.
  2. Make the tzatziki sauce: In a mixing bowl, combine 1 cup of Greek yogurt, the juice from 1 lemon, and 2 minced garlic cloves. Season with salt and pepper.
  3. Mix in the fresh veggies: Fold in the diced cucumbers, diced red onion, and fresh herbs into the tzatziki mixture.
  4. Add the chicken: Fold in 2 cups of shredded chicken until well-coated.
  5. Taste and adjust: Give it a taste and adjust seasoning if needed.
  6. Chill (optional): Let your salad chill in the fridge for at least 30 minutes.

Notes
