Tzatziki Chicken Salad

A refreshing Tzatziki Chicken Salad packed with flavor and crunch, perfect for any occasion!

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh dill, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, diced
  • Salt and pepper to taste
  • Optional add-ons: Olives, bell peppers, feta cheese

Instructions

  1. Prep your chicken by shredding it into bite-sized pieces.
  2. Make the tzatziki sauce by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill in a mixing bowl. Stir until blended.
  3. Build your salad by folding in the shredded chicken and mixing it with the tzatziki. Add halved cherry tomatoes and diced red onion.
  4. Season with salt and pepper to taste. Stir to combine.
  5. Chill in the fridge for at least 30 minutes if desired.
