Watermelon Cucumber Salad

A refreshing salad bursting with the flavors of summer, featuring sweet watermelon and crunchy cucumber.

Ingredients

  • 1 medium Seedless Watermelon
  • 1 medium Cucumber
  • 3 tablespoons Green Onions
  • 1/4 cup Fresh Mint Leaves
  • 3 tablespoons Balsamic Vinegar
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Prepare the Watermelon by cutting it in half and slicing into wedges, then remove the peel.
  2. Chop the Cucumber into half-moons or cubes.
  3. Chop the Green Onions thinly for added color and flavor.
  4. Snip the Mint leaves into small pieces.
  5. Whisk together the balsamic vinegar, olive oil, salt, and pepper in a small bowl.
  6. Combine the watermelon, cucumber, green onions, and mint in a large bowl, then drizzle the dressing over and gently mix.
  7. Taste the salad and adjust seasonings as needed.
  8. Chill in the fridge for 10-15 minutes before serving.

Notes

This salad can be made ahead of time; just keep the dressing separate until serving to prevent sogginess.
