Watermelon Cucumber Salad

A refreshing and vibrant watermelon cucumber salad perfect for sunny days.

Ingredients

  • 4 cups Watermelon, cubed
  • 2 Cucumbers, sliced
  • 1 cup Feta Cheese, crumbled
  • 1/4 cup Fresh Mint Leaves, torn
  • 2 tbsp Lime Juice
  • 1 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the Watermelon by cutting off the rind and cubing it into bite-sized pieces.
  2. Chop the Cucumber, slicing it in half lengthwise and chopping it into half-moons.
  3. Crumble the Feta Cheese into a bowl.
  4. Toss together the watermelon, cucumber, and crumbled feta in a large mixing bowl.
  5. Add the Fresh Mint and drizzle with lime juice and olive oil. Season with salt and pepper.
  6. Mix everything gently and let it chill for about 10 minutes before serving.

Notes

For added crunch, consider topping with crispy fried shallots or nuts.
