Watermelon Fruit Salad with Lime Mint Dressing

A vibrant and refreshing watermelon fruit salad with a zingy lime mint dressing, perfect for summer gatherings.

Ingredients

Scale
  • 4 cups watermelon, cubed into 1-inch pieces
  • 1 ½ cups strawberries, sliced into rounds
  • 1 ½ cups raspberries
  • 1 ½ cups cherries, pitted and halved
  • 2 tbsp freshly squeezed lime juice
  • 1 ½ tsp lime zest
  • 2 tbsp agave syrup
  • 1 tbsp fresh mint, finely chopped

Instructions

  1. Prepare Your Fruits: Wash all your fruits. Slice your watermelon in half, then into quarters. Remove the rind and chop it into cubes. Place in a large mixing bowl. Remove the green tops and slice the strawberries into rounds, then add them to the watermelon. Gently add the raspberries, being careful not to mash them. Pit and cut the cherries in half, adding them into the mix.
  2. Make the Dressing: In a small bowl, whisk together the lime juice, lime zest, and agave syrup. Stir in the finely chopped mint until well combined; adjust sweetness to your liking.
  3. Combine: Pour the dressing over the fruit salad and gently toss to combine, ensuring the fruits remain intact.
  4. Chill: Let the salad sit in the fridge for about 30 minutes to meld the flavors.

Notes

Serve in colorful bowls or individual glass jars. Top with mint or toasted coconut for extra flair. This salad is versatile—feel free to add other fruits or nuts.
