Bakery-Style Pumpkin Muffins

  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp coarse sugar for topping

Instructions

  1. Preheat the Oven to 350°F (175°C).
  2. Combine Dry Ingredients: In a large bowl, whisk flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Mix Wet Ingredients: Beat eggs and add pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract until combined.
  4. Combine Wet and Dry: Gradually add the wet mixture to the dry ingredients and fold until just combined.
  5. Scoop and Fill: Fill muffin tin 2/3 full with batter.
  6. Add the Topping: Sprinkle coarse sugar on top.
  7. Bake to Perfection for 18-20 minutes or until a toothpick comes out clean.
  8. Cool and Enjoy after allowing to cool for 5 minutes.
