Crockpot Balsamic Chicken

A flavorful and easy dish made with chicken thighs marinated in balsamic vinegar, honey, and garlic, perfect for busy days.

  • 2 lbs chicken thighs
  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 cup chicken broth

Instructions

  1. Prepare the chicken: Trim any excess fat from the chicken thighs, and season them lightly with salt and pepper.
  2. Whisk the marinade: In a bowl, combine balsamic vinegar, honey, minced garlic, and Italian seasoning. Whisk until combined.
  3. Place ingredients in the crockpot: Layer chicken thighs at the bottom of the crockpot, pour balsamic mixture over the chicken, and add chicken broth.
  4. Set it and forget it: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred and serve: Remove chicken from the crockpot, shred with forks, and stir back into the sauce.
  6. Plate and enjoy: Serve over rice or greens, and drizzle with remaining sauce.

Notes

For meal prep, consider making a double batch. Leftovers can be used in salads or wraps.
