A flavorful and crunchy meal prep that combines tender teriyaki chicken with fresh vegetables and rice, perfect for busy weeks.

  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup teriyaki sauce
  • 2 cups cooked rice
  • 2 cups snap peas
  • 2 carrots, sliced

Instructions

  1. Prep your chicken by preheating your oven to 400°F (200°C) and slicing the chicken breasts into bite-sized pieces.
  2. Marinate like a pro by combining the chicken pieces with teriyaki sauce and marinating for at least 30 minutes or overnight.
  3. Cook the chicken by spreading it on a baking sheet and baking for 20-25 minutes until cooked and caramelized.
  4. Prepare the rice by cooking according to package instructions or using leftover rice for a quick meal.
  5. Stir-Fry the veggies in a skillet with olive oil for about 3-5 minutes until bright and tender-crisp.
  6. Combine the cooked chicken and veggies in the skillet for a minute to mix.
  7. Assemble your meal prep containers by dividing the rice and topping with chicken and veggies.

Notes

For extra flavor, add minced garlic or grated ginger to the marinade. Store rice and veggies separately for better crunch.
