Buffalo Mac Stuffed Peppers

A flavor-packed dish that combines the comfort of mac and cheese with the boldness of Buffalo sauce, all stuffed into crunchy bell peppers.

Ingredients

  • Mac and Cheese (homemade or store-bought)
  • Bell Peppers (red, yellow, green, or orange)
  • Buffalo Sauce
  • Cheese (optional; cheddar or mozzarella)
  • Green Onions
  • Breadcrumbs (panko or gluten-free)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prep the bell peppers by slicing them in half and removing the seeds and ribs.
  3. Prepare the mac and cheese according to package instructions or your own recipe.
  4. Stuff each pepper half with the Buffalo mac and cheese mixture.
  5. Sprinkle cheese and breadcrumbs on top of each stuffed pepper.
  6. Bake for about 25-30 minutes, until the peppers are tender and the tops are golden-brown.
  7. Garnish with sliced green onions before serving.

Notes

You can make these ahead of time and store in the fridge or freeze before baking. For a lighter version, try using cauliflower instead of pasta.
