Grilled Peach Salad with Burrata

A vibrant and refreshing salad that celebrates summer with grilled peaches, creamy burrata, and a luscious dressing.

  • 3 Peaches (sliced into wedges)
  • 1 Tablespoon Olive Oil
  • 4 Cups Leafy Greens (mix of arugula and butter lettuce)
  • 8 Ounces Burrata Cheese
  • 1 Cup Cherry Tomatoes (sliced lengthwise or heirloom tomatoes, sliced)
  • ⅓ Cup Roasted Salted Pistachios (roughly chopped)
  • ¼ Cup Fresh Basil Leaves
  • ½ Cup Olive Oil (for dressing)
  • ⅛ Cup White Balsamic Vinegar (or regular balsamic vinegar)
  • 1 Tablespoon Raw Honey
  • 1 Tablespoon Dijon Mustard
  • 1 Teaspoon Kosher Salt
  • 1 Garlic Clove (smashed, remove when pouring dressing on salad)

Instructions

  1. Preheat your grill to medium-high heat. Slice your peaches into wedges and toss them with olive oil.
  2. Grill the peach wedges for about 3-4 minutes on each side until charred.
  3. Toss leafy greens into a large salad bowl.
  4. Whisk together the dressing ingredients in a small bowl.
  5. Pour the dressing over the greens and toss gently.
  6. Add the grilled peach wedges, sliced tomatoes, and burrata to the salad.
  7. Top with pistachios and fresh basil leaves, then serve immediately.

Notes

This salad is best enjoyed fresh. Keep the dressing separate if preparing ahead.
